A recipe from Ali Pitcher and Tom Dott of Lamb and Lion Inn

Innkeepers Ali Pitcher and Tom Dott have been in the hospitality business close to their entire lives, collectively from Hawaii to Nantucket. Prior to purchasing the Lamb and Lion Inn in 1999, they owned a 4-Diamond inn and restaurant in New York’s historic Hudson Valley. With passion, hard work, and a dash of insanity,the inn became the smallest property ever to be inducted into the prestigious Relais and Chateaux organization. During their N.Y.stint,Ali and Tom housed and hosted countless notables—-Barbra Streisand, Paul Newman, Mick Jagger, Meryl Streep, Kevin Bacon, John Travolta, Uma Thurman—to name a few. Now enjoying a more relaxed and low-key life providing Cape Cod accommodations, Ali and Tom still wake up every morning ready to treat their guests like rock stars. Tom is the Senior Contributing Editor at Edible Cape Cod Magazine and has won several national food writing awards. When the moon and moods are just right, and there“s a certain “groove” in the air, he also morphs into the Cape“s BEST Elvis impersonator (like there’s more than one). Ali is the most patient woman on the planet.

Cappuccino Chocolate Chip Muffins

This recipe serves 12 people

2 cups all-purpose flour

3/4 cup sugar

2 1/2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup 2% milk

2 tablespoons instant coffee granules

1/2 cup butter, melted

1 egg

1 teaspoon vanilla extract

3/4 cup miniature semisweet chocolate chips

In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.

Fill greased muffin tin two-thirds full. Bake at 375° for 17-20 minutes. Cool for 5 minutes before removing from pans to wire racks. Makes about 12 muffins.
