A recipe from Joan and David Bruce of Tern Inn & Cottages

The Tern Inn has been a guest house and inn for many, many years. It has had a variety of names, and equally, a variety of owners with ideas of the perfect guest house.

Currently the inn is owned and managed by David and Joan Bruce. We are “wash-a-shores” which is a term Cape Codders give to those that are not born here, but make their home here. Originally from the hotel business in Cooperstown, NY, we came to Cape Cod in 1983 with our 3 children, and settled in Chatham where we lived for 18 years.

David began as a cook for the Wayside Inn in Chatham, and has been chef in many local restaurants; Joan worked at home, developing a pastry business baking celebration cakes for all occasions. Our family grew and eventually, we opened our own small restaurant in Chatham, the Break Away Cafe, and enjoyed busy summers for 3 years. After the birth of our 5th child, we decided to leave the restaurant world and David worked for several years in the construction trade. Joan continued to build the wedding cake business and was able to work at home with the family.

Throughout the various restaurants and the cake baking, we were always watching for the perfect inn. We traveled to Vermont, New Hampshire, western Massachusetts and New York, looking for just the right place to blend family and work. In early 2001, a small classified ad for the Term Inn caught our attention, and it was just down the road, 5 miles from our current home! Before we could blink, we were moving in and welcoming our first guests.

With our background in the tourism field, and David’s construction background our adjustment was not difficult. Inn keeping is not like on television, it is hard work, and we were prepared to deal with it. The updating and the remodeling have kept us busy, and we put most revenues back into property improvements. We are almost finished with the updating, but each year brings us new ideas and new demands from our guests. We hope to continue to grow and improve, and we hope to continue to provide our guests with comfortable surroundings reminiscent of old Cape Cod.

The Tern Inn is a unique property , and it is one of a few remaining cottage colonies and inns left on Cape Cod. Our combination of guest rooms or cottages used to be fairly common, but now many of those properties are being turned to condos and private homes. Often guests will comment on the “wonderful feeling” they get from the inn. Is it haunted? No, it is just a place filled with happy memories of families that have visited, but also memories of families that have called it home. It is a really special place, and it is meant to be enjoyed and shared by those that love Cape Cod.

Tern Inn Biscotti

This recipe serves 24 people

3 Tbsp soft butter

1 cup sugar

2 large eggs

1 tsp vanilla

2 cups flour

1/4 tsp baking soda

Cream butter, sugar, eggs and vanilla. Add flour and baking soda and mix well.

Add in any combo of the following:

1 cup dried cranberries

1/2 cup chopped dried apricots

1 Tbsp grated orange peel

1 cup chocolate chips

1 cup white chocolate chip

1/2 cup toasted almonds

1/2 cup chopped pecans

Try a combo of chocolate chips and dried cranberries, or nuts and fruit.

Mix dough with added flavors and divide into 2 equal portions.  Roll each half into a 12 x 3 " log.  Place on parchment lined baking sheet and bake at 350 for 25 minutes.
Remove from oven and cool 10 minutes. (cool any choc chip combo completely)  Cut log in diagonal slices 1/2 " thick, and place upright on baking sheet.  Bake 10 more minutes, until dry.
To drizzle with chocolate, melt chips with 1 tsp shortening and drizzle over upright biscotti.  Store in container for 2 weeks or more.  Great with flavored coffee and teas.   Enjoy!!
