A recipe from Al and Nancy Silva of Top Mast Resort

Al and Nancy Silva purchased the original Top Mast property in 1971 and jumped into a motel business which they knew little about. Countless hours of hard work and dedication over many years created a business that continues to grow today on the foundation they created. Al and Nancy have two children, Jason and Adrienne, who have been working with them at the business since they could walk! In 2004 an opportunity presented itself to expand the Top Mast property by buying the neighboring motel business that was owned by Nancy’s parents. It was the perfect opportunity for getting the family to work together and to begin the second generation of Top Mast. It has been several years since the purchase and the start of many, many renovations and additions, the latest being the new indoor health and swim club, tennis and basketball court area and cafe patio area. The Top Mast family continues to grow with the proud addition of four grandchildren.

Fish en Papillote (in Parchment)

A recipe from Innkeepers Al and Nancy Silva of Top Mast Resort

This recipe serves 4 people

2 or 3 pieces of any fish (about 2 lbs)

2 tbsp. olive oil

2 cloves garlic

1 bunch green onions, chopped or one onion, sliced

1 tomato

1 bunch fresh asparagus

1 tbsp. minced parsley

1 stalk celery, sliced thin

1/3 cup white wine

1 tbsp. lemon juice

1 lemon, sliced for garnish

Fresh ground pepper to taste

Parchment Paper

Sauté garlic, scallions and celery in olive oil until soft

In the middle of parchment paper drizzle a little olive oil

Add sliced tomato

Place fish on top

Add all other ingredients, including wine

Top with lemon slices

Fold parchment paper butcher-wrap style

Secure folded ends with large paper clips

Bake on cookie sheet at 375 for about 15-20 minutes, check fish for doneness

Serve on platter in paper
